--Trace your child's handprint.
-Cut out handprint.

Cupcakes Without Eggs

This reciepe is great for vegans or if you just don't have any eggs on hand.

Things you need:
Box of your favorite cake mix
Oil
Can of Soda

-Choose your soda. Depending upon the color of the cake, you will want to choose the appropriate soda. For a dark cake, a cola works perfectly. For a light cake, try a lemon-lime alternative.
-Mix all ingredients. You will add the measured amount of oil as directed on the box of cake mix. Instead of adding water and eggs, simply add one can of soda. Mix thoroughly.
-Bake as directed plus 5 minutes. (The extra 5 minutes will account for any extra liquid.)
-Enjoy your cake. This cake comes out a little more moist than cakes made by traditional directions. Enjoy with your favorite icing or powdered sugar.

When icing your cupcakes, use a piping bag to prevent the cake from crumbling.

Basic Chicken Salad Reciepe

Sometimes simple is best. When it comes to chicken salad I like to make it basic and allow each person to dress it up as they want.

Ingredients:
-Chicken
--You can use left over chicken (do not used fried chicken) or you can cook chicken.
-Mayo
-Celery
-Salt
-Pepper

Dice chicken into cubes. Dice celery. Combine chicken, mayo*, celery** and season with salt and pepper for taste.

*Amount of mayo is left up to your discretion. I prefer 1 cup chicken to 1/2 cup mayo.
**I prefer 1/4 cup diced celery to 1 cup chicken.

Suggestions:
-You can spread chicken salad on bread and dress as a sandwhich.
-You can place it on a bed of lettuce with tomato, cucumber, onions, black olives, bell pepper, pickles, etc and eat as a salad.
-Have plain with crackers.

Jelly Bean Easter Carrots

You can make these colorful jelly bean carrots very quickly, but they have such a bright, springtime appeal that you can be sure they will please everyone on your Easter list.

Pile Easter grass inside a shiny metal collander and nestle the jelly bean carrots inside to use as a unique Easter table centerpiece, or hide them (if you can) as unusual finds in your Easter egg hunt.

You could offer one of these jelly bean carrots as a winning prize in an Easter game, or tie a few together as a bunch of carrots to decorate your door or wall instead of a wreath. The same bunch of carrots could then be the focus of a "guess the number of jelly beans" game. Who knew carrots could be such fun?

What You Will Need:
-Cellophane cone shaped bags or clear plastic icing bags (these are usually available at Michaels, or sometimes in the cake decorating aisle of your grocery store)
-Orange and green jelly beans
-Green tissue paper
-Green curling ribbon

Directions:
-Fill the bag about half full with orange jelly beans. Add a layer of green jelly beans. Prop the bag inside a narrow vase or wine glass to hold it up while you work on the next steps.
-Cut a strip of folded green tissue paper that is a little wider than the length now available from the top of the green jelly beans to the edge of the bag. Make sure the double-layered tissue paper strip is long enough to roll easily into a loose circle that will fit nicely inside the top of the bag. A generous overlap when you slide the ends of the circle together is fine and will add a little body to the top of the carrot.
-Roll the tissue paper strip loosely and fit it inside the bag, pushing it down to meet the top layer of green jelly beans.
-Tie one or two strands of curling ribbon around the bag, just above the green jelly beans, so that the ribbon cinches the bag tightly and holds the tissue paper in place.
-Curl the ends of the ribbon.

Other Suggestions:
-Fill the carrot with other orange colored candy, or with cheese puffs, and top with a layer of green easter grass.
-Omit the green jelly beans, if you don't have them, and rely on the green tissue paper to provide the carrot's greenery at the top.
